Episode 23 Easy simple stew/pie dumplings Makes 15 dumplings Ingredients 100g plain flour 50g butter Black pepper 1tspn baking powder 1/2 tspn salt Instructions In a bowl add the flour, pepper, salt and baking powder, give it a mix then add the butter, break the butter with your fingers and slowly start adding bits of water, until the dough comes together but doesnt stick on your hands. In this video I show you how to make famed Korean Chef Beak Jongwon's delcious and easy pork filling recipe for dumplings (mandu). This pork filling was so easy to make and really, really, really delicious! It'd probably be very good just simply topped on a bed of rice, no need to make dumplings if your just in for a good meal. If you have the time let it cool down for a few hours or even put it in the fridge and pull it out the next day. Once the meat is cold you will see that the juices of the meat/sauce will all congeal which will allow you a little easier experience making the dumplings and plus it will keep a lot of moisture in the dumpling. The congealed liquids will loosen up upon cooking and the insides of the dumplings will be super juicy and delicious. Oh you know what! It's early in the year, have you made Korean New Years Soup? Learn how to make the BEST chicken n dumplins you will every have!! Comfort food at it's finest! This takes a bit of time to make and some multitasking is required but the payoff is SO worth it! What you'll need: 2 split chicken breasts (on the bone with skin, about 3 lbs) 8 cups water 2 bay leaves 1-1/2 tsp salt 3 celery stalks, chopped 3 carrots, chopped 1 medium onion, chopped 1 tsp paprika 1/2 tsp dried thyme 1/2 tsp black pepper 1/4 tsp garlic powder 1 stick (1/2 cup) butter 2/3 cup AP flour 1/4 cup cream 1/2 cup frozen peas In a large pot or dutch oven, add in split chicken breasts, water, salt and bay leaves. Bring to a boil and cook over medium heat for 45 minutes. Don't boil too hard or tooo much water will evaporate. Prepare the vegetables and dumplings. for the dumplings: 1-1/4 cups AP flour 2 tsp baking powder 1/2 tsp salt 2 Tbsp butter 1/2 cup milk In a glass measuring cup, heat the milk and butter until butter is melted. In a medium bowl, combine flour, baking powder and salt. Add in milk and butter mixture and stir with a fork just until combined. Dough should be soft. Turn out onto a floured surface and knead just a few times to make it come together (no more than 8 times). Roll out to 1/8" thick and cut into 1" strips and then into 3-4" pieces. Cover with a damp towel until ready for them. Meanwhile, after the chicken has cooked for 45 minutes, remove to a plate and let cool before shredding. Remove bay leaves from the stock. Add in the chopped vegetables and cook for 10 minutes. In a separate small saucepan, melt butter and whisk in flour. Cook over medium heat for 30 seconds, stirring constantly to create a roux. Gradually add in stock until thinned out a bit. Add roux mixture to the stock with the vegetables and whisk until no lumps remain. Add in cream and peas. Bring to a light boil and add in the dumplings, one by one. Stir gently, cover and cook for 10 minutes or until dumplings are tender and done. Take off heat and add back in the shredded chicken. Stir to heat the chicken through and serve. Serves 4-6. Enjoy!! this is adapted from an Emeril Lagasse recipe for chicken and dumplings. In the video, I mention that the dough pieces should be between 12 to 14g for medium-sized dumplings and 14g to 16g for larger dumplings. Those are measurements that I like when I'm using the dough to make potstickers. I want the wrappers to be slightly thicker so that they can withstand the heat during the pan-frying process. It's a matter of personal preference, really. If you are making steamed or boiled dumplings, you'll probably want the dumplings skins to be thinner. For example, with xiaolongbao (小籠包/soup dumplings), I've seen many recipes recommend the wrappers to be about 9 to 10 grams each because you want the dumpling skins to be very thin. Also, I'm rolling out the wrappers until they're about 3.5 to 3.75 inches in diameter. If you don't have rolling pins at all, you can use a jar to roll out the wrappers. You can also roll out sheets with a pasta machine and use a cookie cutter to cut out the shapes. Steamed & Boiled Dumplings Recipe Frozen Dumpling used: Pork & veg Dumpling We are starting off easy, these are dumpling dishes you typically see on a menu in a Chinese Restaurant. If you want your dumplings in its cleanest and purest form, this is for ya! And of course we gotta dip it in our dumpling sauce concoction of 1 part soy sauce, 1 part vinegar and 1 part sesame oil (can't go wrong with that) 2. Frozen Pan-fry dumplings / frozen gyoza recipe Frozen Dumpling used: Pork & veg Dumpling - 500ml water - 100g flour - 60g oil - pinch of salt Mix that together and use it as your dumpling batter to create the most crispy dumpling base. 3. Frozen Dumpling Soup Frozen Dumpling used: Shanghai wonton (pork & vegetable) Broth: 1 cup water 1 cup chicken broth half a cup of carrots half a cup of wambok 2 x slices of ginger 4. Frozen Dumpling Noodle Soup Frozen Dumpling used: Shanghai wonton (pork & vegetable) Broth (same as above) Noodles: vermicelli - but you can use whatever you want 5. Wonton in Chilli Oil & Vinegar/ Sichuan Spicy Wonton in Red Oil (红油抄手 - Hong You Chao Sou) Frozen Dumpling used: Shanghai wonton (pork & vegetable) Sauce mix: 1 tablespoon vinegar 1 tablespoon soy sauce 1 tablespoon oyster sauce 1 teaspoon sugar 1 clove chopped garlic handful of spring onions & cilantro Chilli Oil (amount to your preference) 6. Fried Wontons Frozen Dumpling used: Cantonese wontons (pork & prawn) tip: make sure you drop a piece of the egg pastry into the oil; once that floats to the top, your oil is at the right temp 7.
